Rice has been in the human diet since the last 5,000 years. This staple food has gods dedicated to it in different cultures, hinting its importance. There are over 40,000 varieties of rice all over the world (except Antarctica) that are prepared differently. Cooked rice can be combined with any food item, be it curry or gravy-less sautéed vegetables. We, at Hotel Empire (Bangalore), bring you 10 rice recipes to drool over:
Ghee Rice: This rice item can be made by simply light-frying the cooked rice in ghee. The base is made by adding a bit of Asafoetida, ghee and most importantly, cashew.
Vegetable Pulao: This is the most cooked rice recipe. It’s because it is really easy to prepare and can be cooked entirely in a pressure cooker. Add a variety of chopped vegetables and masala in the cooker and let it simmer till it is prepared.
Vegetable Tahiri: Vegetable Tahiri is traditionally prepared as a mixture of boiled potatoes, cauliflower and sometimes peas. The difference between this recipe and ‘Khichdi’ is that no other lentils are added. Turmeric gives it its yellow look. The masala also includes cinnamon, bay leaf and cardamoms as per taste.
Jeera Rice: Jeera (cumin seeds) can pack a punch when cooked with Basmati rice. Prepare the rice first and then add the masala infused Jeera base to it. Preparing it is so easy that even bachelors with no cooking experience can perfect it.
Schezwan Fried Rice: This Chinese recipe adds a tang with schezwan sauce and vinegar. The rice is cooked al dente. Chopped lettuce, spring onions, and bell pepper are usually added to this recipe.
Tomato Rice: This South Indian recipe features lot of tomatoes and spices. Chili powder, ginger-garlic paste, and black pepper are added to prepare Tomato Rice.
Khichdi: This recipe only requires you to add rice, moon lentils and salt to taste in a pressure cooker. Khichdi is the best alternative for patients advised to take light food. In India, eating Khichdi on Saturdays is considered auspicious and is dedicated to the God- Shani.
Hyderabadi Chicken Biryani: In this case, the chicken is cooked first and almost cooked rice is layered on it. Saffron essence is added to make the Biryani colorful. A mixture of hot spices and curd are added to give Hyderabadi Chicken Biryani a distinct taste.
Lucknowi Chicken Biryani: The less spicy cousin of Hyderabadi Chicken Biryani, Lucknowi Biryani adds Kewra and saffron as the main ingredients. This Biryani is cooked without curd.
Kheer: This is the traditional rice dessert offered after a hearty meal in India. Rice is cooked with milk and sugar to make a thick delicious pudding. You can also add cashew and raisins.
